Your uncle left you his old grill house in the heart of the bazaar: a few plastic stools, a cat that never leaves, and a mangal that hasn't been lit in years. Fire it up, open the shutter, and feed the neighbourhood.

Customers come to your window and tell you what they want, in their own words and their own moods. Read the order, thread the skewers, cook them over live charcoal, plate them with fresh bread, rice, pickles and amba, and serve. Nail it and the tips roll in. Burn it and you'll hear about it.

A grill that's actually alive

This isn't a progress bar. The coals cool over time, the centre burns hotter than the edges, and meat keeps cooking whether you're watching or not. Move skewers between hot and cool spots, fan the fire back to life, flip at the right moment, and knock down flare-ups with a splash of water before they char everything in the lane.
